Things are about to get a whole lot more exciting on One Beet!
T and I are taking the plunge and following our longtime dream to spend an extended period of time traveling. We’re stepping back from our jobs in Boston and spending the next nine months exploring Europe and North Africa. This will be a chance for me to focus more time on One Beet, take cooking classes with a range of international chefs, explore local agriculture and healing practices, and cook, cook, cook!
I am thrilled about this adventure and inspired to leap and see the net appear. It is fascinating to actually manifest a dream like this instead of simply talking about it — definitely scary, but incredibly invigorating! Some of you may have seen a change like this coming from my New Year:New Growth post. We’ve been setting our intentions and planning to make this trip a reality for a while. It’s hard to believe it is actually here, but I have a feeling it’s going to get real in a hurry when we take off this Saturday.
We’ll be spending our first month abroad in France. We were there two years ago (these photos are from that trip) and I’ve been dying to go back ever since. The culinary scene in France is legendary and I can’t wait to dig in and start learning.
The details of our itinerary are still being fine-tuned, but here are the basics:
April — France
May – Spain and Switzerland
June – Germany, Scandinavia, and Austria
July – UK and Ireland
August – Greece and Turkey
September – Turkey, Israel, Montenegro, and Bosnia
October – Croatia, Hungary, Poland, and the Czech Republic
November – Italy and France
December – Morocco, Tunisia, Egypt
It’s going to be an adventure to be sure, and I look forward to sharing the culinary and wellness highlights with all of you on One Beet.
