Italian White Beans with Kale and Tomatoes

Ingredients
  • 1 can white beans (cannellini or great northern), rinsed
  • 1 large bunch of kale, chopped
  • 2-3 cups of diced tomatoes - either from a box, or fresh chopped tomatoes
  • 2 red onions, chopped
  • 4 cloves garlic, minced
  • 3 tsp red wine vinegar
  • 2 tsp olive oil
  • Salt and pepper to taste
  • Optional - grated parmesan
Instructions
  1. Sauté garlic and onion in olive oil on medium/high heat for five minutes or until they become aromatic.
  2. Add the chopped tomatoes, white beans, and vinegar and sauté for 15 minutes, or until the tomatoes have cooked down and thickened.
  3. Fold in the kale and continue cooking for 3 minutes, or until the kale has wilted.
  4. Top with salt, pepper, and grated parmesan cheese.
