Silky dried beans have long been an elusive beast in my kitchen. Given my commitment to whole foods and traditional cooking methods, I prefer to use dried beans, but often end up slightly crunchy beans that are not-quite-as-good as those from a can. Luckily, I’ve continued to persevere and am thrilled to announce that I’ve figured it out. This is the *perfect* dry bean recipe and leaves you with creamy, thick, and delicious beans every time.

I have to tell you that this is THE BEST bean recipe I have ever tried-way better than a pressure cooker! I have been using it since it was featured on MIND BODY GREEN. I have even mixed up some of the ingredients depending on what I have on hand or the beans I choose to use. As per your advice, I make a huge pot and use it all week in different ways. Great for a family of 6-well worth the three days and turns out actually easier since every day is minimal effort. Thank you so much-I really appreciate it!
