As you know, I like to cook big batches of dried beans and am always looking for creative ways to use them on day two, three, and four. This is one of my favorite recipes to transform the leftover beans into a new meal with a completely different look, feel, and flavor. It’s delicious on it’s own, or used as the filling for Black Bean + Sweet Potato Tacos. Enjoy!
